Each class, during graduation, families share their recipes with one another and us. Here are two favorites. We will be compiling recipes from our families into a book which will be available for purchase. Does your family have a favorite recipe? Feel free to send it to us!

Cucamole
Fruit Tacos

 

Cucamole (Guacamole with Cucumbers)

1 cucumber, peeled & chopped
1 small avocado, chopped
¼ cup minced red onion
2 Tbs. cilantro
1 serrano chile, seeded & minced
1 clove garlic, minced
2 Tbs. lime juice
1 Tbs. Water
Salt

Combine all the ingredients. Salt to taste. Eat with baked tortilla chips.

1 pepino, pelado y picado
1 aguacate pequeño, picado
¼ taza de cebolla roja, picada
2 cucharadas.de cilantro, picado
1 chile serrano, sin semillas y picado
1 clavo de ajo, picado
2 cucharadas de jugo de limón
1 cucharada de agua
sal

Combine todos los ingredientes. Añada sal al gusto. Coma con tortilla chips horneadas.

Baked Tortilla Chips/Tortilla Chips Horneadas
4 corn or flour tortillas
Non-stick cooking spray
Crushed oregano
Coarse salt

  1. Cut each tortillas into 8 wedges
  2. Arrange in single layer on baking sheets, spray with non-stick cooking spray
  3. Sprinkle with oregano and salt
  4. Bake at 400º F for 8 to 10 minutes until brown and crisp


4 tortillas de maíz o harina
Pam o otro spray de aceite
Oregano molido
Sal con grande piezas

  1. Corta cada tortilla en 8 pedasos
  2. Arregla las tortillas en una hoja para hornear y rocielas con Pam
  3. Rocie con oregano y sal
  4. Hornea a 400º F por 8 a 10 minutos hasta que estén tostadas y crujientes

Fruit Tacos/ Tacos de Fruta

12 whole graham crackers
8 ounces "lite" non-dairy whipped topping, thawed
1 cup sliced strawberries
1 cup peeled and sliced peaches
1 cup sliced bananas
1 cup blueberries
½ cup all fruit strawberry jam

  1. Break graham crackers in half.
  2. Set the pieces of graham crackers on a serving plate.
  3. Spread each piece with about 2 tablespoons of the non-dairy whipped topping.
  4. Layer with pieces of each type of fruit. Top each cracker with 1 tablespoon of the all fruit strawberry jam on each cracker.
  5. Serve immediately or refrigerate until ready to serve.

12 galletas de graham
8 onzas de "lite" non-dairy whipped topping, descongelado
1 taza de fresas, cortadas
1 taza de duraznos - pelados y cortados
1 taza de platanos, cortados
1 taza de arándanos,
½ taza de mermelada de fresa, hecha de pura fruta

  1. Rompa las galletas de graham en mitad.
  2. Ponga las galletas en un plato de servir para formar una capa.
  3. Cubra cada galleta uniformemente con 2 cucharadas de non-dairy whipped topping.
  4. Encima de cada capa agregue cada tipo de fruta. Añada 1 cuchara de mermelada de fresa en cada galleta.
